Recipe I love

I've been obsessed with the website Skinny Taste. I started looking for recipes on there when I started Weight Watchers in 2009. I stopped doing WW when I lost all the weight I wanted but the food is always so yummy. :) I have been IN LOVE with this sandwich and salad I've been making lately that I found on the website. It's very simple to make and I made a few changes.



Prosciutto, Arugula and Balsamic Sandwich

Servings: 1 • Serving Size: 1 sandwich • Old Points: 6 pts • Points+: 7 pts
Calories: 289.8 • Fat: 6.8 g Carb: 40.8 g Fiber: 1.7 g Protein: 10.8 g
 
  • 3 oz french bread or baguette
  • 2/3 cup baby arugula
  • .75 oz imported prosciutto (fat trimmed)
  • 2 tsp balsamic vinegar
  • 1 tsp extra virgin olive oil
  • fresh cracked pepper

Whisk together balsamic and oil. Cut bread, top with arugula, prosciutto and top with balsamic, oil and fresh cracked pepper.

My changes: 
  • Instead of using prosciutto I used 2 or 3 slices of ham. Prosciutto can be expensive. I tried it last week with it and decided this week to just use ham. It's still delicious. :)
  • Instead of using french bread I bought a whole grain baguette at Kroger and cut it up into four pieces. I froze the pieces I didn't use and warm them up in the microwave when it's time to eat.
  • Instead of using arugula I use spring mix. Arugula is too spicy for me and it's not my favorite.

This was my lunch. I already took two bites out of my sandwich because I was STARVING. 

 I also made a yummy fruit salad. :) I bought a personal watermelon and it was so cute.
